Dumpling Haus was started in 2016 in a local coffee shop in Houston. The business began as a pop-up restaurant that would also set up locations at farmers markets and bars. In January 2020, Dumpling Haus opened up a brick-and-mortar location in Sawyer Yards and has been operating there since then. The restaurant is known for their dumplings, beef noodle soup, and dishes like braised pork belly that combine traditional Chinese and Taiwanese ingredients with American palates and diets. In this interview, Dumpling Haus owners Ashley Lai, Amiley Lai, and their mother Elaine Won talk about their journey opening up their restaurant and their experiences in the Houston food scene. They also discuss their menu items such as vegan dumplings, overall business decisions, and how they have managed to thrive and be successful for the past four years. They also go into how Dumpling Haus has combated the effects of the COVID-19 pandemic and what their goals are for the restaurant in the future.
